  • 4 eggs
  • 1 2/3 c. sugar
  • 1 c. oil
  • 16 oz. can pumpkin
  • 2 c. flour
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. soda
  • 3 oz. cream cheese, softened
  • 1/2 c. butter, softened
  • 1 tsp. vanilla
  • 2 c. powdered sugar

Step 1

In mixer bowl, beat together eggs, sugar, oil and pumpkin until light and fluffy. In a bowl, sift together the flour, baking powder, cinnamon, salt and soda. Add to the dry mixture to the wet pumpkin mixture and mix well.
Spread batter in a greased 9x13 pan. Bake in a 350 degree F. oven for about 40 minutes. Remove from oven and allow to cool.

For the Frosting:

Cream together cream cheese and butter. Stir in vanilla. Add sifted confectioners' sugar, a little at a time, beat until smooth. Spread on cooled cake. Cut into small bars.
For a optional added touch, LIGHTLY dust with pumpkin spice,
