Ingredients

  • Muffin pan
  • Muffin papers (optional)
  • Baking spray
  • 1/2 cup unsweetened applesauce
  • 2 tablespoons honey or molasses
  • 3 eggs
  • 1/4 cup peanut butter, smooth or chunky (unsalted)
  • 2/3 cup 100 percent pumpkin puree or 2 ripened, mashed bananas
  • Two mixing bowls
  • Two large spoons
  • 1/2 teaspoon cinnamon
  • 2 cups oatmeal flour
  • 1/2 cup water (optional)
  • Clean dish cloth
  • Toothpick
  • Wire cooling rack
  • Icing:
  • 8 ounces of cream cheese
  • 8 tablespoons creamy peanut butter (unsalted)
  • 2 tablespoons vegetable oil (optional)
  • Knife
  • Storage container

Preparation

Step 1

Treat Cakes:
Preheat the oven to 350 degrees.

Place muffin cups inside the muffin pan if you are using them.

Apply baking spray to the pan, if not, and set it aside.

Place the applesauce, honey or molasses, eggs and peanut butter in the mixing bowl.

Stir thoroughly.

Add the pumpkin puree or bananas and mix the batter well.

Add the cinnamon to the batter, and half of the oatmeal flour.

Stir these dry ingredients completely into the batter before adding the remainder of the oatmeal flour.

The mixture should have the consistency of regular cake batter.

If it is too dry, add up to 1/2 cup water.

If it is too moist, add a little more oatmeal flour until you are satisfied with the batter's thickness.

Fill the muffin papers or cups 2/3 full of the batter; wipe any dripped batter off the rims or pan edges with a clean, damp rag.

Bake the cupcakes for 18 to 21 minutes, or until a toothpick inserted into the center comes out free of batter.

Allow the muffins to cool completely on wire racks before removing them from the muffin pan.



Icing:
Place the cream cheese in the second mixing bowl.

Allow it to soften to room temperature while the cupcakes cool.

Stir the softened cream cheese with a spoon to a creamy consistency.

Add the peanut butter and mix the two ingredients thoroughly.

Add the oil only if the icing appears too thick to spread easily.

Spread the icing on the cooled cupcakes with a knife before giving one to your dog.

Store the cupcakes in the refrigerator in an airtight container.
