Ingredients
- 3 cups (750 mL) all-purpose flour
- 2 cups (500 mL) granulated sugar
- 2 tsp (10 mL) baking powder
- 1 tsp (5 mL) baking soda
- 1/2 tsp (2 mL) salt
- 2 eggs
- 3/4 cup (175 mL) milk
- 2 tsp (10 mL) vanilla
- 1 cup (250 mL) melted and cooled butter
- 2 cups (500 mL) mashed banana
- 1 cup (250 mL) bran
- 1 cup (250 mL) chopped walnuts or chopped pecans or combination of both
- 1 cup (250 mL) shredded coconut
Preparation
Step 1
Preheat oven to 350 degrees F (180 degrees C). In large mixing bowl sift together flour, sugar, baking powder, baking soda and salt. In a separate bowl mix together eggs, milk, vanilla and butter. Make a well in the dry ingredients, then pour in the egg mixture and mix just until blended. Try not to over-mix.
By hand, gently fold in mashed banana, bran, walnuts or pecans and coconut. (For extra decadence, fold in 1/2 cup (125 mL) chocolate chips.) Pour batter into greased or paper-lined muffin tins and bake for 20 to 25 minutes.
