Navojo-Style Peach Crisp

Ingredients

  • Filling:
  • 7 cups peeled and sliced fresh peaches
  • 1 cup sugar
  • 1/4 cup all-purpose flour
  • 2 tablespoons fresh lemon juice
  • Topping:
  • 1 cup all-purpose flour
  • 2/3 cup yellow cornmeal
  • 2/3 cup sugar
  • 1 teaspoon salt
  • 2/3 cup cold butter, cut into small pieces
  • 1/2 cup toasted pine nuts

Preparation

Step 1

1. Preheat over to 375F. Butter a 10x8-inch baking dish.
2. To prepare filling, combine all the ingredients into a large bowl. Spoon evenly into prepared pan.
3. To prepare topping, combine flour, cornmeal, sugar and salt into a medium bowl. Using your fingers, work butter into ingredients until mixture resembles coarse crumbs. Mix in pine nuts.
4. Sprinkle topping over fruit. Set pan on a baking sheet to catch any juices that spill over. Bake 45 minutes, or until peaches are bubbling and fork-tender and the topping is golden in color. Serves 10.
