Ingredients
- Ingredients:
- Softened unsalted butter for brushing molds.
- 1/2 cup flour sifted plus more for dusting
- 2 eggs
- 1/3 cup sugar
- 1/4 teasp. salt
- 11/2 teasp. vanilla
- 4 Tbsp. unsalted butter melted and cooled
- Confectioners sugar for dusting
Preparation
Step 1
Oven 375 degrees
Brush butter over each mold. Dust molds with flour.
Tilt pan to coat molds evenly.
In large bowl, combine eggs, sugar, and salt
With mixer on med. high speed, beat until pale, thick and fluffy.
about 5 mins.
Beat in vanilla
Sprinkle sifted flour over egg mixture and beat on low speed until incorporated.
Using a rubber spatula fold in 1/2 melted butter, then remaining butter.
Divide batter evenly over prepared molds using heaping 1 Tbsp. batter for each mold.
Bake until tops spring back when lightly touched 8-12 mins.
Remove pan from oven and invert over wire rack, then rap pan on rack to remove madeleines.
Let cool on rack for 10 mins.
Using fine sieve, dust with conf. sugar ....Makes 16
