Ingredients
- 2 C all-purpose flour
- 1 C Whole Wheat Flour
- 1 tsp Salt
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp Cardomom
- 1/4 tsp Nutmeg
- 3 eggs
- 2/3 C Vegetable Oil
- 1/2 C Sugar Free Applesauce
- 1/2 Lemon or Orange Zest
- 3/4 C White Sugar
- 3/4 C Brown Sugar
- 1 T Vanilla extract
- 2 C Grated Zucchini
- 1 C Chopped Walnuts
- 1/2 C Semi Sweet Chocolate Chips

Preparation
Step 1
Mix Oil, Sugar, Eggs, Vanilla, Lemon Zest & Applesauce until creamy. Add zucchini. Sift together Flour, Baking Powder, Baking Soda & Spices. Add slowly to oil mixture. Do not overmix. Stir in Nuts & Chocolate Chips. Pour into 2 8" loaf pans or 4 mini loaf pans. Bake @ 325 55 min for 8" pans 45 min for mini loaf pans.
