Grilled Asparagus Wrapped in Eggplant

Ingredients

  • 1 eggplant cut into 1/4 inch slices
  • 30 asparagus, tough ends cut off and remainder of stalk peeled
  • Olive oil
  • Teriyaki Sauce

Preparation

Step 1

Cook asparagus in boiling water and plunge into ice water.

Grill the eggplant. I used a grill pan on top of the stove. Brush slice with olive oil and place in pan. Brush remaining side with oil. Grill, turning until cooked

When done, brush eggplant slice with teriyaki and wrap it around 2 asparagus spears. Brush eggplant with teriyaki. Serve at room temperature.
