Ingredients
- 5 pounds Ground beef or deer meat
- 6 Jalapeno peppers, seeded and chopped
- 1 tablespoon Black peppercorns, cracked once
- 2 tablespoons Curing salt (kosher salt)
- 1 teaspoon Garlic salt
- 1 tablespoon Liquid smoke
- 1/4 teaspoon Mustard seed
- 1/4 teaspoon Onion salt
- 2 teaspoons garlic pepper

Preparation
Step 1
Mix all ingredients well. Form into 2 rolls and wrap tightly in foil. Refrigerate 24 hrs. Bake over broiler pan with water at 350 F. for 1 1/2 hrs. Remove from foil after baking. Good served hot or cold.
