Ingredients

  • 2/3

    cup all-purpose flour

  • 1/2

    cup yellow cornmeal

  • 3

    tablespoons granulated sugar

  • 1

    tablespoon baking powder

  • 1/4

    teaspoon salt

  • 2

    tablespoons vegetable oil

Directions

Combine first 5 ingredients in a bowl, mix well. Store in covered container until needed. When a recipe calls for a jiffy corn bread muffin mix just whisk in the vegetable oil and mix until dry mixture is smooth and lumps are gone. and you have your substitution.
