  • 12 pearl onions
  • 4 tbls butter
  • 3 tbls flour
  • 1 tsp salt
  • 1/8 tsp pepper
  • 1 cp light cream
  • 1 cp milk

Step 1

in med pan boil water salted lightly
drop onions and boil for 1 min. bring onions to a bowl of ice to stop cooking.
drain the cooled onions slip off and discard their skins set aside

melt butter in med pan stir in flour, salt, pepper and form a paste roux cook for 1 min. whisk in the cream and milk, reduce the heat to low stir constantly with wooden spoon until thickened to a med gravy consistency 3-5 minutes

Toss in onions and sauce into a serving dish and garnish with parsley
