Ingredients
- 1 3/4 c flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1 c grated carrots
- 2 eggs
- 2/3 c veggy oil
- 2/3 c brown sugar
- 1/4 c water
- 1/2 c crushed pineapple drained
- 1/2 c chopped pecans

Preparation
Step 1
Butter 12 cup muffin pan
combine flour, baking powder, soda, salt, cinnamon and nutmeg
grate carrots
in a bowl stir together eggs, oil, sugar and water until smooth
add to dry ingredients w/ pineapple, carrots and pecans
stir until combined
spoon into muffin cups
bake at 350 until tops spring back when lightly touched - 20-25mins
