    c grated carrots

  • 2

    eggs

  • c veggy oil

  • c brown sugar

  • ¼

    c water

  • ½

    c crushed pineapple drained

  • ½

    c chopped pecans

Directions

Butter 12 cup muffin pan combine flour, baking powder, soda, salt, cinnamon and nutmeg grate carrots in a bowl stir together eggs, oil, sugar and water until smooth add to dry ingredients w/ pineapple, carrots and pecans stir until combined spoon into muffin cups bake at 350 until tops spring back when lightly touched - 20-25mins
