POTATO PANCAKES (Latkes)

Ingredients

  • 6 med potatoes
  • 1 sm onion diced
  • 4 eggs separated (beat whites stiff)
  • 3 tbl flour
  • 1/4 tsp pepper
  • 1 tsp salt
  • 1/2 tsp baking powder

Preparation

Step 1

POTATOES:
peel cut up and place in bowl cold
water
IN FOOD PROCESSOR: with both blades (bottom & grating on top) grate potatoes. In a strainer in a bowl put grated potatoes and let stand till liquid is drained.

MEANWHILE: separate eggs and beat egg whites till stiff and set aside.

MIX: Potates in bowl with egg yolks, salt pepper, flour baking powder, onions. Now fold in very carefully egg whites.

COOK: Heat pan with oil. Spoon mix cook until brown on both sides. Place on paper towel.
