Ingredients

  • 6 loaves stale bread
  • 4 cups of celery
  • 2 cups diced onion
  • 1 lb butter
  • Small bunch of fresh parsley
  • Salt and pepper to taste
  • Chicken broth

Step 1

Saute celery to soften in 1/2 the butter and mix with bread- hands are best. Saute onion with remaining butter until soft. Mix by hand into the bread. Keeping the celery and onion separate while cooking creates a cleaner flaver. Add fresh chopped parsley, salt and pepper to taste. Can mix 24-48 hours in advance. Right before cooking, drizzle 1/2 can of chicken broth over the filling and mix. Bake uncovered one hour, stirring half way through and until crusty around the edges.

I add 1/2 tsp of poultry seasoning to this recipe.
