Italian Sausage Rigatoni

Ingredients

  • Sauce:
  • 1 pkg Sweet Italian Sausage (5 links)
  • 16 oz rigatoni pasta
  • 1 red bell pepper (coarsely chopped)
  • 1 tsp minced garlic
  • 28 oz can crushed tomatoes
  • 1/4 cup red wine
  • 1 tsp garlic powder
  • 2 tsp basil
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp rosemary

Preparation

Step 1

For sauce, mix all sauce ingredients in a small saucepan and cover. Simmer on low until ready to use.

Cook Italian sausage according to directions in skillet. Remove from pan and slice into coins. Add red bell pepper to the same skillet. Cook until softened. Stir in garlic. Cook for one minute. Stir in sausage coins and reduce heat to low until ready to use, stirring occasionally. If necessary, drain on a paper towel before using in pasta.

In a large stock pot, cook pasta according to package. Drain.

Add pasta back to stock pot. Pour meat and sauce over the noodles. Stir well to coat.
