Potted Stilton

Ingredients

  • 1/2 lb Stilton Cheese
  • 1/4 c unsalted butter, softened
  • 2 T brandy or port wine
  • 1/2 c chopped walnuts
  • pinch cayenne pepper
  • 2 T butter
  • Walnut halves

Preparation

Step 1

Crumble Stilton into a bowl
Add the 1/4 c butter and work into Stilton with a wooden spoon until well blended.
Mix in brandy, chopped walnuts, and cayenne.
Pack mixture into 4 ramekin dishes.

In small saucepan, melt remaining butter over low heat.
Pour clear liquid over cheese mixture, discarding the milky residue in the pan.
Leave potted Stilton to cool.
Serve garnished with walnut halves.
Serve with crackers.
