Black Bean Salad with Southwest Steak

Ingredients
- 2 15 oz. cans black beans, thoroughly rinsed
- 1 pint grape or cherry tomatoes, halved (around 24)
- 2 avocados, diced
- 2 limes, juice of
- 1 T southwest seasoning
- 1/3 cup canola oil
- 1/4 cup chopped fresh cilantro
- 1 lb. steak (we used sirloin)
- 1 t southwest seasoning

Step 1
In a large bowl, combine the beans, tomatoes, avocados, lime juice, southwest seasoning, canola oil and cilantro. Stir well to combine. Set aside to let the flavors mingle while you prepare the steak.
Wash the steak and pat dry. Rub on both sides with the southwest seasoning. Grill or broil to your desired level of doneness. 1" thick sirloin medium rare is about 5-6 minutes per side over medium high heat. Divide the black bean salad among 6 plates. Thinly slice the steak and arrange on the plates. Sprinkle the steak with lime juice and serve.
