- Eye of round roast
- Salt &pepper

Preparation
Step 1
Add salt & pepper to the roast. Put in a roasting pan, DO NOT COVER. DO NOT ADD WATER.
Put roast in a pre-heated ,500 degrees, oven.
Reduce temperature to 475 degrees.
Roast 7 minutes per pound, turn oven off.
Keep roast in oven for 2-1/2- hours.
DO NOT OPEN OVEN DOOR!
Remove roast from oven when internal temperature reaches at least 145 degrees.
