Adzuki Bean Brownies

Now to the good stuff….these brownies are a bit labor intensive, but they are worth it.  You will not be sorry you took the time to make them.  And, if your children like chocolate, these make a great healthy snack or after dinner dessert.  If you have a bean brownie recipe, I would love to hear about it.  Enjoy!

Ingredients

  • 1/3 cup sprouted spelt flour
  • 1/4 cup ground flaxseed
  • 5 TBSP raw cacao powder
  • 2/3 cup sugar
  • 1 tsp ground coffee or coffee substitute (I use an herbal substitute called Teecino)
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 1 15oz can adzuki beans – rinsed and drained
  • 1/3 cup coconut oil
  • 1/3 cup unsweetened apple sauce
  • 1 cage free egg – beaten
  • 1/2 cup dark chocolate chips

Preheat oven to 350.  Whisk together all dry ingredients (do not include the chocolate chips) in a large bowl.  In a double boiler melt the chocolate chips and coconut oil.  In a food processor or blender add the beans, melted chocolate chips and oil, and applesauce.  Puree until the beans are a creamy texture.  Combine the bean mixture into the dry ingredients, add the beaten egg and stir until well incorporated.  Spray a 9×9 baking pan.  Pour mixture into the prepared pan and spread out evenly.  Bake for 20 minutes or until a toothpick inserted comes out clean.
