Scalloped Eggplant

Ingredients

  • 1 med eggplant, peel & cube (3c)
  • 1 T parsley, fine chop
  • 12 oz grated cheddar cheese
  • 2 egg
  • 1 med onion, chop
  • 1 c cracker or Italian bread crumbs
  • salt & pepper
  • butter

Preparation

Step 1

Boil eggplant til tender (5-10 min). Drain. In buttered baking dish combine eggplant, parsley, cheese (save little for top), egg, onion, cracker. Sprinkle remain cheese, salt & pepper. Dot with butter.
