- Four 1-ounce squares unsweetened chocolate
- 1 cup soft butter
- 2 cups confectionery (powdered) sugar
- 4 eggs
- 1 teaspoon vanilla
- 1 teaspoon peppermint extract
- 1 cup crushed Vanilla Wafers
- 12 candied cherries cut in half
- 24 cupcake holders (silver ones for Xmas)

Step 1
Melt chocolate, cool, and set aside. Using an electric beater, beat butter while gradually adding sugar (about 15 minutes); add cooled, melted chocolate. Beat 5 minutes more. Beat in eggs, one at a time. Mix in vanilla and peppermint extract.
Pulverize vanllia wafers in an osterizer until they are as fine a bread crumbs. Put a tablespoon of wafer crumbs in the botton of the cupcake holders that are in the cupcake pans. Pour enough chocolate mixture in each cup to fill them 1/2 full. Sprinkle a little vannila wafer crumb on top of the chocolate mixture and top with a half a candied cherry.
Freeze for at least 3 hours.
*Can substitute one 6-ounce package of chocolate chips. Do NOT substitute margarine for butter.
