    1-ounce squares unsweetened chocolate

    cup soft butter

  • 2

    cups confectionery (powdered) sugar

    teaspoon vanilla

    teaspoon peppermint extract

    cup crushed Vanilla Wafers

    candied cherries cut in half

    cupcake holders (silver ones for Xmas)


Melt chocolate, cool, and set aside. Using an electric beater, beat butter while gradually adding sugar (about 15 minutes); add cooled, melted chocolate. Beat 5 minutes more. Beat in eggs, one at a time. Mix in vanilla and peppermint extract. Pulverize vanllia wafers in an osterizer until they are as fine a bread crumbs. Put a tablespoon of wafer crumbs in the botton of the cupcake holders that are in the cupcake pans. Pour enough chocolate mixture in each cup to fill them 1/2 full. Sprinkle a little vannila wafer crumb on top of the chocolate mixture and top with a half a candied cherry. Freeze for at least 3 hours. *Can substitute one 6-ounce package of chocolate chips. Do NOT substitute margarine for butter.
