Ingredients

  • 1

    cup MinuteĀ® White Rice, uncooked

  • 1

    can (15 oz.) black beans, drained and rinsed

  • 1

    medium red pepper, cut into thin strips

  • 1/2

    cup fat free peppercorn ranch dressing

  • 2

    green onion, thinly sliced

  • 1/4

    cup fresh cilantro leaves, chopped

  • 1

    tsp ground cumin

Directions

Prepare rice according to package directions. Place rice in large bowl. Add remaining ingredients; mix lightly. Cover. Serve at room temperature or chill several hours before serving.
