Pumpkin Spice Blondies with Brown Sugar Cream Cheese Frosting

These blondies are deliciously pumpkin spiced and topped with brown sugar cream cheese frosting for a treat that's perfect for fall or winter.
Ingredients
- FROSTING:
- 2 cups all-purpose flour
- 1 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon ground allspice
- 1/2 teaspoon freshly grated nutmeg
- 1 teaspoon baking soda
- pinch of salt
- 8 ounces butter, softened
- 1/2 cup granulated sugar
- 3/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup pumpkin puree
- 8 ounces cream cheese, softened
- 2 ounces unsalted butter, softened
- 1/3 cup light brown sugar
- 1 teaspoon vanilla extract
- zest of 1 orange

Preparation
Step 1
Spray an 11x7-inch baking dish with cooking spray; line with parchment paper; spray paper. Preheat oven to 350°F.
Whisk together flour, spices, baking soda, and salt; set aside.
Cream butter and sugars until pale and fluffy, about 2 minutes. Add the egg and vanilla and combine.
Add the pumpkin puree. Don't worry if the mixture looks curdled at this point; thats normal. Add flour mixture half a cup at a time, and beat until just combined.
Scrape batter into prepared pan and level with spatula. Bake in preheated oven for 30 to 35 minutes, or until golden. A toothpick inserted in the center should come out clean.
Let blondies cool on rack. While blondies are cooling, make frosting. Place all ingredients in a medium mixing bowl and beat with an electric mixer until smooth and fluffy, 3 to 5 mins.
Remove cooled blondies from pan by pulling gently on parchment sling. Spread with frosting. Refrigerate.
