Coconut Rice

Ingredients
- 1 can coconut milk (13.5 oz)
- 1/2 C water
- 1 1/3 cup rice
- 2 Tbsp Sugar
- sprinkle of salt
- 1 Tbsp. butter

Step 1
Combine water, butter, coconut milk and a sprinkle of salt in medium sauce pan. Let the mixture come to a boil, stir in rice, let boil for 1 minute (continue stirring).
Turn burner to low, put lid on the pan and let cook for 15 minutes. Turn off burner, take off lid and let set 5 minutes before fluffing.
This is when I added the sugar, you may leave it out if you would like, however, the sugar really brings out the coconut flavor. The rice was still hot enough to dissolve the sugar.
