6 Weeks Bran Muffins

Ingredients

  • 3 cups Bran Buds (dissolved in 1 cup of boiling water)
  • 2 beaten eggs
  • 1/2 cup oil
  • 1 1/2 cups sugar
  • 2 cups buttermilk
  • 2 1/2 cups flour
  • 2 1/2 tsp soda
  • 1 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 box of raisins

Preparation

Step 1

Pour water over bran and set aside while mixing other ingredients. Mix together eggs, oil, sugar and buttermilk. Sift together flour, soda, salt and cinnamon. Combine all ingredients. Fold in raisins.

Bake at 375º
small muffin tins: 10-12 minutes
large muffin tins: 25-30 minutes

+ Keep batter covered in refrigerator for as long as six weeks. Stir raisins up from bottom and use only amount of batter needed for the occasion. They freeze well after baking.
