skillet cornbread

Ingredients
- 1 tsp salt
- 2 c self rising cornmeal mix
- 2 c buttermilk
- 1/2 c water to thin
- 3 tbsp bacon grease

Step 1
Heat oven to 450 deg. Mix salt and cornmeal together in a large bow. In another bowl mix buttermilk with water. Make a well in the bottom of the mix and put in the bacon grease and the buttermilk water mixture. Stir just enough to mix ingredients well. Mixture should be pourable. Grease
black iron skillet heavily with bacon grease and get the pan hot in the oven. Take the pan out, pour the
batter in and return to oven. bake 30 mins or until top turns toasty brown. When done turn pan upside down on a place and cut cornbread into wedges. Slice the wedges open like a layer cake and butter while hot. Or....think the batter to pancake batter consistency and drop into greased frying pan to make little cornbread cakes. Butter and serve hot
