Frosted Cauliflower

Ingredients
- 1 medium head of cauliflower, leaves and stem removed
- 1/2 cup mayonnaise (regular works best for this recipe)
- 1-2 t dijon mustard
- 1/4 t salt
- 3/4 cup shredded sharp cheddar cheese
- 1/2-1 t hungarian-style sweet paprika

Step 1
Wash the cauliflower and place in a microwave safe, 1 1/2 quart casserole dish with only the water that clings to it. Cover and cook in the microwave on high for 6-7 minutes per pound. If your microwave does not have a rotating platter, turn the casserole dish 1/4 turn halfway through cooking. remove from the microwave and let stand, covered, for 5-10 minutes. In a small microwave safe bowl, combine the mayonnaise, mustard and salt. Microwave on high for 30-60 seconds, until hot. Stir to blend and then spread evenly over the cauliflower. top with cheese and heat in the microwave on high until the cheese melts, about 1 minute. Sprinkle with paprika and serve.
