Olive Garden Copycat Zuppa Toscana

Ingredients
- 1 lb. Italian sausage
- 2 lrg russet baking potatoes, sliced in half and then in 1/4 inch slices
- 1 lrg onion, chopped
- 1/2 cup to 1 cup oscar meyer bacon bits
- 2 cloves of garlic, minced
- 2 cups kale or swiss chard or spinich, chopped
- 2 cans (3 1/2 cups-- 29 oz) chicken broth
- 1 quart (4 cups) water
- 1 cup heavy whipping cream

Preparation
Step 1
Cook sausage in a 300 degree oven for approx. 30 mins.
Drain sausage and cut into pieces.
Place onions, potatoes, chicken broth, water and garlic into pot and cook on medium heat until the potatoes are done.
Add sausage and bacon.
Salt and Pepper to taste.
Simmer for another 10 mins.
Turn to LOW heat.
Add kale/chard or spinich AND cream.
Heat another 2 to 3 mins and serve.
