Lemon Tea Cookies

Ingredients

  • Icing:
  • 1 cup unsalted butter
  • 1 1/2 cups flour
  • 1/2 cup confectioners sugar
  • 3/4 cup corn starch
  • 4 tsp lemon zest
  • 1/4 tsp salt
  • 3 tbsp lemon juice
  • 2 cups confectioners sugar
  • 4 - 5 tsp lemon juice
  • dash of salt

Preparation

Step 1

Cream the butter. While creaming, add the confectioners sugar using a sifter. Add the lemon zest.

Sift the remaining dry ingredients together. Mix in to the butter mixture. Let stand 10 minutes.

Shape into 1" balls. Place 1" apart on parchment lined cookie sheets.

Bake at 350F for 15 - 18 minutes. Cool on sheets for 10 minutes then transfer to a rack to continue cooling.

Once completely cool, dip each cookie in icing to coat the top.

Icing:

Mix ingredients together. Icing should be fairly thin, glaze like.
