Ingredients
- Crust:
- 1/4 cup unsalted butter, melted
- 18 graham crackers, rolled into crumbs
- 1/4 cup sugar
- 1/2 teaspoon cinnamon
- Filling:
- 1 cup granulated sugar
- 3 packages cream cheese (8 oz each), softened
- 5 eggs
- 1 cup sour cream
- 1 tsp vanilla
- Topping:
- Blend 1 pint sour cream with 1/2 teaspoon vanilla, 1 tablespoon lemon juice, 1/4 cup sugar. Pour this mixture over cooled filling. Bake at 500 degrees for 5 minutes only. Remove from oven and cool. Refrigerate 2-3 hours before removing from pan.
Preparation
Step 1
1. Preheat oven to 350 degrees F.
2. Grease sides of a springform pan.
Crust Directions:
1. In a large bowl, combine butter, sugar and graham cracker crumbs. Pour into bottom of pan and sprinkle cinnamon. Then press into bottom of springform pan.
Filling Directions:
1. In a large mixing bowl, beat sugar and cream cheese on medium-high speed for 3 minutes.
2. Add eggs, one at a time, mixing well after each egg is added.
3. Mix in sour cream and vanilla until smooth. Pour the filling batter over the crust.
4. Bake for 1 1/2 hours in preheated oven or until firm. Remove from oven and let cool 20 minutes.
