Santa Maria Beans

Ingredients

  • 2 x 1 lb. pkg. Pinquinto or Pinto Beans - rinsed & draiuned
  • 1 1/2 quart cold water
  • 2 x 16 oz. can whole tomatoes
  • 1 ham hock (1 lb,) cracked
  • 2 lg. white onions, chopped
  • 2 c bottled salsa sauce
  • 1/2 lb., salt pork - 4 pieces
  • 2 t leaf oregano, crumbled
  • 1/4 t crushed red pepper

Preparation

Step 1

1) Combine beans & water in large kettle. Soak overnight. Do not drain.

2) Add tomatoes and all ingredients. Bring to boil, cook for 5 min., simmer uncovered for 6 hrs. or until beans are tender. Add water as necessary to keep covered by 2".

Beans are best made a day ahead and refridgerated overnight.
