Herbed Sauteed Squash

  • 8 small yellow firm squash
  • 3 Tblsp butter
  • Pinch of Thyme, Rosemary, and Marjoram
  • 2 green onions, chopped
  • 2 Tblsp soy sauce
  • 1/4 cup dry white wine
  • Seasoning to taste



Step 1

Scrub squash and slice thinly. Saute in butter over medium heat until translucent and slightly limp, but not mushy, about 10 minutes. Add thyme, rosemary, marjoram, and green onions. Saute for another 2 minutes. Add soy sauce and white wine. Season to taste. Stir until blended. Can be gently reheated. Serves 4
