Ingredients

  • Boiled potatoes

  • Boiled eggs

  • 1/2

    cup sugar

  • 1

    tlb. cornstarch

  • 1

    tsp. dry mustard

  • 1/2

    tsp. salt

  • 3/4

    cup water

  • 1/4

    cup vinegar

  • 2

    eggs slightly beaten

  • 1

    cup real mayonnaise ( Do not substitute salad dressing for REAL

  • MAYONNAISE).

Directions

IN large sauce pan combine: sugar, cornstarch, mustard, salt, vinegar and eggs. COOK, stirring until thick and bubbly. REMOVE from heat. Cover with plastic wrap so no film forms. COOL. WHEN cool stir in mayonnaise into cooled mixture. Stir into cubed potatoes. Then lightly stir in cubed hard boiled eggs. Let sit to blend the ingredients. Can be made night before. MAKES a large bowl of cubed potatoes.
