Aromatic Pork and Rice Pot

Ingredients

  • 400 g lean pork, cubed or cut into thin strips
  • 2 onions, peeled and finely chopped
  • 1 garlic clove, minced
  • 2 cm piece root ginger, finely grated
  • 1 cinnamon stick or 1 tsp ground cinnamon
  • 1 bay leaf
  • 2 star anise
  • 100 g green beans, halved
  • 1 red pepper, deseeded and sliced
  • 1 large carrot, peeled and cut into 3 cm batons
  • 225 g dried long grain or basmati rice, rinsed and drained
  • 2 tbsp. soy sauce
  • 450 ml chicken stock
  • Small handful of fresh flat-leaf parsley

Preparation

Step 1

Add pork, onions, garlic, ginger, cinnamon, bay leaf and star anise to a Dutch Oven and stir-fry 4-5 minutes. Add the beans, pepper, carrots, rice, soy sauce and stock. Season and stir to mix well.

Bring to the boil, cover and reduce heat to low. Cook for 12-15 minutes then remove from the heat without removing the lid. Allow to stand, covered, for 15 minutes longer. Uncover, stir in the parsley and serve.
