Savory Sausage Stew

This hearty stew is perfect on a chilly, rainy day. If you like, serve it steaming hot in big mugs with thick slices of multigrain bread for a casual, satisfying meal.

Ingredients

  • 1 tsp vegetable oil
  • 3/4 poudn Italian-style turkey sausage, casing
  • removed
  • 2 onins, chopped
  • 1 turnip, peeled and chopped
  • 1/2 carrot, sliced
  • 1 celery stak, sliced
  • 4 new red potatoes, scrubbed and quartered
  • 1 c. chicken broth
  • 1 bay leaf
  • 1/2 tsp dried thyme
  • 1/4 tsp dried sage
  • 1/4 tsp freshly ground pepper
  • 1/2 small head green cabbage, cut into 4 wedges
  • 1 tsp all-purpose four, dissolved in 1 tbsp cold water
  • 1/4 c. minced parsley
  • 2 tsp cider vinegar

Preparation

Step 1

Heat the oil in a nonstick saucepan, then add the sausage, onion, turnip, carrot, and celery. Cook, breaking apart the sausage with a spoon, until the sausage is browned. Stir in the potatoes, broth, bay leaf, thyme, sage and pepper; bring to a boil. Place the caggabe over the stew, then reduce the heat, cover, and simmer until the potatoes and cabbage are teder, about 15 mnintues. With a slotted spoon, transfer the cabbage to a serving bowl.

Stir the dissolved flour itnot he stew; simmer, stirring frequently, until the liquid thickens slightly. Witha slotted spoon, transfer the sausage and vegetables to the serving bowl; discard the bay lear. Stir the parsely and vinegar into the liquid; pour over the sausage and vegetables.
