Cinnamon and pears pies

  • 4 pears peeled and whole
  • 1 cup 3 / 4 sugar
  • 2 cinnamon sticks
  • 40 grs.. soft butter
  • 1 teaspoon vainilla
  • 3/4 cup liquid cream
  • 2 eggs, separated
  • 1 cup chopped almonds
  • 3/4 cup plain flour
  • 1 teaspoon baking powder

Preparation

Step 1

1. In a medium saucepan cook the apples with 3 / 4 cup cinnamon sugar and 4 cups cold water, cover and cook over low heat until the pears are soft but firm.

Remove from heat and let cool.


2. Preheat the oven to warm. In a bowl mix remaining sugar with the butter, vainilla, cream, almonds, yolks and flour, beat until mixture is smooth and thick.


In another bowl beat the whites and incorporated into a with smooth.


3. Pour the mixture into individual ramekins half full.


Place a pear in center of each ramekin and press. The batter should cover three quarters of the surface of the bulb. Bake 25-30 minutes until mixture is firm and golden.
