Ingredients
- 3/4 lb unsalted butter, room temperature
- 1 cup sugar
- 1 tsp vanilla
- 1 tsp almond extract
- 3 1/2 cups all-purpose flour
- 1/4 tsp salt
- 1 1/2 cups small diced pecans
Preparation
Step 1
1. Preheat the oven to 350F. In the bowl of an electric mixer fitted with a paddle attachment, mix together the butter and sugar until just combined. Add the vanill and almond extracts.
2. In a medium bowl, sift together the flour and salt, then add them to the butter/sugar mixture. Add the pecans and mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in a plastic and chill for 30 mins.
3. Roll the dough 1/2" thick and cut into 2 1/2" squares with a plain or fluted cutter (or any shape). Place the cookies on an ungreased baking sheet.
4. Bake for 20-25 mins until the edges begin to brown. Allow to cool to room temperature and serve.
