This elegant dish was a favorite of the Kins'x during his Las Vegas year. It was one of the dishes served at the wedding breakfast buffet at the Aladdin Hotel on May 1 1967.

Ingredients

  • 1 teaspoon corn oil
  • 8 slices Canadian bacon
  • 1 teaspoon white vinegar
  • 4 eggs
  • 2 tablespoons butter
  • 2 tablespoons Flour
  • 1 cup milk
  • 1 cup shredded Cheddar Cheese
  • 2 English muffins, split , toasted, and buttered

Preparation

Step 1

Lightly grease a large frying pan with the corn oil. Heat over medium-high heat. Add the Canadian bacon and cook until well done, about 5 minutes. Drain the bacon on paper toweling. Keep warm.
Bring 2 cus of wter to a boil in the bottom of a 4 egg poaching pan. Place 1/4 teaspoon vinegar and one egg in each of the cups and cover. Cook for 2 to 3 minutes (If you don't have a poaching pa cook the eggs for 2 to 3 minutes in a small pot of simmering water to which 2 teaspoon of white vinegar has been added.)
While the eggs ae cooking, melt the butter in another saucepan. Stir in the flour gradually add the milk, stiring constantly. Add cheese stiring until melted.
Place two slices of canadian bacon on each English Muffin. Pour te cheese sauce over each egg and serve hot.
