Chuck Wagon Skillet Dinner

Ingredients
- 1 lb. ground beef or ground turkey
- 1/2 cup chopped onion
- 3/4 t. salt
- 1 (1 1/4 oz.) package taco seasoning mix
- 1 1/2 cups water
- 1 1/2 cups thinly sliced zucchini
- 1 cup frozen whole kernel corn
- 1 (14 1/2 oz) can stewed tomatoes, undrained
- 1 1/2 cups uncooked instant rice
- 4 oz. shredded cheddar or velveeta cheese
Preparation
Step 1
In large skillet, brown the ground meat, onion and salt til beef is thoroughly cooked. Drain. Stir in seasoning mix, water, zucchini, corn and tomatoes. Bring to a boil. Stir in rice. Reduce heat to low; cover and simmer 5 to 7 minutes or until lizuid is absorbed, stirring occasionally.
Remove from heat. Fluff mixture with fork; sprinkle with cheese. Cover; let stand 3 minutes or until cheese is melted. If desired, garnish with diced red bell pepper and jalepenos.
