Basic Vinaigrette Dressing

Ingredients

  • 1 small clove garlic, minced
  • Pinch salt
  • 2 Tbsp. red wine vinegar
  • 2 tsp. Dijon mustard
  • 1/4 tsp. fresh marjoram, or 1/8 tsp. dried ground ground black pepper to taste
  • 1/4 cup low-sodium chicken broth
  • 2 Tbsp. extra-virgin olive oil

Preparation

Step 1

1. In a mortar and pestle (or small bowl with a small spoon), mash the garlic and salt together into a paste.
2. In a small jar with a tight-fitting lid, combine the mashed garlic, vinegar, mustard, marjoram or pepper; shake to blend. Add the broth and oil and shake until smooth.,
