STRAWBERRY - RHUBARB CRUMBLE

Got this from a Philly contest website... Top with either iced cream or Creamy Vanilla Sauce

Ingredients

  • 2 cups strawberries, sliced (fresh or frozen)
  • 4 cups rhubarb, cut into 1/2" cubes (fresh or frozen)
  • 1/2 cup sugar (add up to 1/4 cup more if fruit is tart)
  • 3 tbsp. flour tsp vanilla extract
  • 1 1/2 cups flour
  • 1/2 cup brown sugar
  • 1/2 tsp citrus zest
  • 1/4 tsp nutmeg
  • 1/2 cup unsalted butter, soft but not melted
  • 1 tsp vanilla
  • 1/2 cup chopped pecans, toasted
  • 1 oz icing sugar (for dusting)

Preparation

Step 1

Toss the fruit with the sugar and add sugar if required. Add the 3 tbsp. flour and vanilla. Place in a 9" baking dish.

CRUMBLE

Combine the dry ingredients. Add the vanilla and butter and cut into till crumbly. Put over fruit - pat but do not press down.

Bake at 350 degrees for 35 minutes.

Top with vanilla sauce or ice cream.
