Ingredients

  • 1 cup 1

    cup rolled oats (or gluten-free oats)

  • 1 cup 1

    cup coconut powder (or toasted coconut flakes)

  • 1/2 cup 1/2

    cup carob chips

  • 1/2 cup 1/2

    cup peanut butter

  • 1/2 cup 1/2

    cup ground flaxseed

  • 1/3 cup 1/3

    cup honey (or agave nectar)

  • 1 1

    teasp. vanilla extract

Directions

1. In a mixing bowl, combine all of the dry ingredients. 2. Add the peanut butter, honey (or agave nectar), and vanilla extract and thoroughly mix to combine all the ingredients. 3. Let the mixture chill in the fridge for about 30 minutes. 4. Once they are chilled, roll them into 1" diameter balls (you can use a cookie scooper to do this step). 5. Store in an airtight container and keep refrigerated.
