Ingredients
- 1.1 /2 C Fresh Breadcrumbs
- 1/4 C Finely Chopped fresh
- Curly Parsley.
- 1/4 C Parmesan Cheese
- 1/4 C Romano Cheese
- 1 Tbsp Italian Seasoning
- 1 tsp Coarse Salt
- Ground Pepper
- 3 Pkgs (9 oz@)Frozen
- Artichoke Hearts, thawed
- and drained
- 2/3 C Olive Oil plus
- more for baking dish
- 1/4 C Fresh Lemon Juice
- from 2 Lemons
- 1 Tsp Lemon Zest
- {2 Minced Garlic Cloves
- 2 tsp}
Preparation
Step 1
325º Preheat oven.
Combine breadcrumbs, parsley, cheeses,
herbs, and salt in a medium bowl
and season with pepper.
Brush oil inside two 4 cup
9 1/2" baking dishes or one
9X13 glass baking dish.
Place artichoke hearts into pan
and spread into single layer.
Sprinkle breadcrumb mixture over
artichokes, pushing into cracks
btwn hearts. Tap bottom of dish
on counter to settle breadcrumb
mixture. Whisk oil, lemon juice,
zest and garlic in a small bowl.
Drizzle dressing evenly over
breadcrumb topping.
Cover dish with parchment paper
then foil. Bake 30 minutes.
Increase temperature to 375º
uncover and bake 20-25 minutes
until breadcrumbs are golden brown.
Serve immediately.
