Ingredients
- Crumb Topping:
- 1/4 1/4 1/4 cup firmly packed dark or light brown sugar
- 1/4 1/4 1/4 cup crystallized ginger, minced
- 2 2 2 tablespoons fresh lemon juice, from one lemon
- 1/4 1/4 1/4 teaspoon nutmeg
- 1/4 1/4 1/4 cup all-purpose flour
- 5 5 5 cups peeled and cored sliced pears
- 1/3 1/3 1/3 cup all-purpose flour
- 1/4 1/4 1/4 cup sugar
- 3/4 3/4 3/4 cup ground walnuts
- 6 6 6 tablespoons salted butter, chilled
Preparation
Step 1
Preheat the oven to 375 degrees. Grease a 9-inch-square pan or a 9-inch deep-dish glass pie plate.
To Make the Pear Mixture:
In a large bowl, combine the brown sugar, ginger, lemon juice, nutmeg, and flour.
Add the pears and toss them gently in the mixture. Spoon the pear mixture into the prepared pan and set it aside.
To Make the Crumb Topping:
In a small bowl, combine the flour, sugar, walnuts, and butter. Blend them until the mixture is crumbly.
Top the fruit evenly with the crumb mixture. Place the pan on a cookie sheet to catch any drippings.
Bake it for 1 hour or until the crumb topping starts to brown and the fruit is bubbly.
Yield: 1 nine-inch crisp
