Roast Beef w/Horseradish Mayo, Crispy Onions

Ingredients

  • Crispy Onions:
  • Roast Beef
  • Vegetable Oil for frying
  • 1 large onion
  • 1 cup flour
  • 1/2 teaspoon kosher salt
  • Horseradish Mayonnaise:
  • 1/4 cup horseradish, drained
  • 1 tablespoon creme fraiche or sour cream
  • 1/4 cup mayonnaise
  • 1-1/2 teaspoon Dijon mustard
  • 1-1/2 teaspoon whole-grain mustard
  • Good bread
  • 1 tomato, thinly sliced

Preparation

Step 1

Onions:

Line baking sheet with paper towels and set aside.

Pour the vegetable oil to a depth of about 2 inches and heat over medium-high heat to 350 degrees. While the oil is heating, slice the onions as thinly as possible. Scoop the flour into a large bowl. Add the onions and toss until thoroughly coated.

Whgen the oil is ready, remove half of the onions from the flour bowl, shake them to remove excess flour, and carefully drop into the oil. Stir constantly to avoid over browning, 5-7 minutes or until golden. Remove with slotted spoon and transfer to prepared baking sheet, sprinkle with 1/2 teaspoon salt. Cook remaining onions in same way. They can be cooked up to 2 days in advance and stored in an airtight container at room temperature.

Mayo:

In a small bowl, stir together the horseradish, sour cream, mayo, Dijon mustard and whole grain mustard until well combined. Store in an airtight container in the fridge up to 2 weeks.

Sandwiches:

Lay out slices and in following order:

Spread with horseradish mayo
Top with greens.
Top with the tomato slices
Top with the beef
Top with the onions
Close with second half bread.
