Bacon and Leek Flatbread

Ingredients

  • 1 recipe Basic Bread Dough
  • 1/2 lb bacon, chopped
  • 1/2 stick unsalted butter
  • 4 large leeks, white and pale green parts only, washed and sliced
  • 1/2 teaspoon freshly grated nutmeg
  • 8 ounces creme fraiche
  • Salt and freshly ground black pepper

Preparation

Step 1

After the dough has risen once, place it on a floured work surface and stretch it into a large rectangle with a long side toward you.

Preheat the oven to 450 degrees

Cook the bacon and butter together in a large heavy skillet over medium heat until golden not crisp, about 5 minutes. Stir in the leeks and cook, covered, until the leeks are wilted, th uncover and cook until any liquid in the skillet has evaporated, 8 to 10 minutes total. Stir in nutmeg and season with salt and pepper to taste. Remove from the heat and whisk in the fraiche.

Stretch the dough to fit inside an oiled baking sheet, then spread the leek mixture evenly o the dough. Bake the flatbread until the dough is golden and crisp, 20 to 25 minutes.
