Ingredients
- 4 cups cooked quinoa
- 1 to 2 cups cooked chickpeas
- 1 cup diced cucumber
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/2 cup diced red or yellow bell pepper
- 1/4 tsp. garlic powder
- juice and zest from 1 lemon (about 1/4 cup)
- 1 tbsp. red wine vinegar
Preparation
Step 1
Mix all ingredients together in a large bowl.
This versatile dish can be served on a green salad for protein filled meal, as a side dish at a potluck, or as part of a wrap. I like to spread hummus on a tortilla, fill it with raw spinach, then add the Quinoa Salad.
