Coconut Mango Rice with Chicken

  • Ingredients:
  • Short sticky white rice (1 1/2 cups)
  • Unsweetened Coconut Milk (one 13.5 oz. canned)
  • Water (1 cup)
  • Thai Mangos (2 pieces, cubed)
  • Salt (1 teaspoon)
  • Cilantro (1 cup, stems removed)
  • For chicken:
  • Chicken Breast (1 lb., no skin, cubed)
  • Curry Powder (1 tablespoon)
  • Paprika (1 teaspoon)
  • Garlic (4 cloves, minced)
  • Vegetable oil

Preparation

Step 1

1. Cook Rice with mangoes.

2. Saute garlic in vegetable oil. Add chicken. When chicken is cooked add spices. Add to rice.
