Ingredients

  • pounds large cooking apples

  • ½

    cup sugar

  • 2

    tablespoons flour

  • ½

    teaspoon ground cinnamon

  • 1

    unbaked 9 inch pastry shell

  • 2

    tablespoons lemon juice

  • Topping:

  • ½

    cup sugar

  • ½

    cup flour

  • ½

    cup (1 stick) butter

Directions

Peel apples and cut into fourths, trimming out core. Sliceeach quarter into thirds. Place in large bowl. Mix sugar, flour and cinnamon in cup and sprinkle over apples. Toss to coat well. Spoon into pastry shell and drizzle with lemon juice. Make topping,combine sugar and flour in small bowl. Cut in butter. Sprinkle over apples to cover. Slide pie into clean (unused) heavy brown paper bag large enough to cover pie loosley. Fold open end over twice and fasten with paper clips. Place on large cookie sheet for easy handling. Bake at 425 degrees for 1 hour. Apples will be tender and top bubbly and golden. Split bag open, remove pie, cool and serve. Makes 8 servings.
