French Onion Potatoes Au Gratin

Ingredients

  • No-Stick Cooking Spray
  • 3/4 cup water
  • 1/2 cup French onion sour cream dip
  • 1 cup Hungry Jack® Mashed Potatoes
  • 1 tablespoon chopped canned green chiles
  • 1 to 2 tablespoons butter, melted
  • 1/4 cup (1 oz.) shredded Cheddar cheese, plus additional for garnish, if desired
  • 1/4 cup French fried onions (optional)

Preparation

Step 1

Spray an 8-inch cast iron skillet or 9-inch pie pan with no-stick cooking spray. Bring water to a boil in medium saucepan. Stir in dip; mix well. Remove from heat. Add potato flakes and green chiles; mix well.
Spoon potato mixture evenly into prepared skillet. Top with melted butter and 1/4 cup cheese.
Broil 4 to 6 inches from heat for 3 to 4 minutes or until cheese is bubbly and golden brown. Sprinkle with additional cheese and onions if desired. To serve, cut into wedges.
